Okonomi-yaki: お好み焼 (Okonomi-Yaki)




Since it was raining last weekend, I cooked some Okonomi-Yaki for my family.
Some people say it is "Japanese Pancake" but it is not quite right. It look pancake but it tastes more heavy dish. It has variety of ingredients more than juts dough.
Hiroshima and Osaka are popular region for this popular food, "Okonomi-Yaki"
I would like to introduce recipe for Osaka style today.
(I will make Hiroshima Style later on)


Step 1: Make Stock
As usualmake Stock "Dashi" by Tangle and dried Bonito flaked. (refer to "Chinese Pork Nabe" in the old post) And put it in the refrigerator for a few hours.



Step 2:  Make Dough
Go to Japanese Super market get Okonomiyaki Flour first ^_^
Then mix it with the Dashi with ratio of Flour 1 : Dashi 1.3.
Mix it little by little. and let it cool in the fridge if you have extra time.



 Step 3: Mix them
Mix dough with diced Cabbage. Do not make the dice too big, not too small. Mix them with Cabbage 1 : Dough 0.7. put shrimp, Squid as you like. Put Egg mandatory.
Do not mix too hard. Mix them gently and softly.



Step 4: Fry it
put it onto the pan and make shape with spoon. Make it like 15-18 cm and Put Sliced Pork Ribs. Once you make shape and put the slices, DO NOT Touch. let it cook with Mid-high temp.
Once you check the bottom and you see the bottom get barley colored, then you turn it.





Step 5: Dinner is ready
You turn it once again. The side of Pork should be the front.
Put Okonomi-Yaki source (Go to Japanese Supermarket ^_^;:) , Mayo and seaweed fleak and dried Bonito flakes.



Step 6: If you want to try REAL thing,
Go to Osaka.


Hmmm.. it was Yummy....

Chinese Cabbage & Pork Nabe: 白菜鍋 (Hakusai Nabe)


Hakusai, Chinese Cabbage is a popular vegetable in winter season.
Today, I would like to share a recipe of Chinese Cabbage Nabe (Pot) with you.
The recipe is so simple but this simple Nabe surely makes you hot and smile.. 


Step 1: Prepare Soup "Dashi"
Put 2-3 pieces of Tangles into a pan with cold water and leave it for a few hours.  Boil it and put bonito flakes right before it gets boiled.



Step 2: Make Nabe
Cut Chinese cabbage and sliced pork rib into bite-sized pieces. Then put Chinese cabbage and pork alternately as below photo. If you like, put sliced garlic.



Step 3: Boil it
Put "Dashi" and Sake into #2, and boil it till Sake loses its alcohol.



Step 4: Done
Putting some Sesame Oil and sesame excite your appetite..



Step 5: Eat & Drink
Let's eat! Eat it with ポン酢 "Ponzu",  soy source with Citrus juice.
It surely is a best match with Barley Shochu.
I had a half bottle of Shochu last night....^_^;



It is so easy to cook and Try this at your home!

This Nabe keeps you warm in cold winter nights.

Pots : 鍋 (Nabe)


Shabu-Shabu, Sukiyaki, Pots… We love Pot “Nabe” dish! Especially in Winter season. When friends get together, when Family re-unite, “Nabe” is the Number One option for meal. You put different kinds of ingredients. Crab, Meat, vegetable, noodles etc. Do you like soup Spicy? Sweet? Bonito favor? Tangle favor? Or Soy Source or Miso Flavor? It Depends on your appetite. Hey, but No matter what you prefer, you must have an earthen pot. This unique traditional cookware can keep your food warmer during the winter season.... Let me introduce one of my favorite Nabe.




Recipe: Chicken Nabe with Soy Source Flavor Soup

Soup:  put 2-3 pieces of Tangles into a pan with cold water and leave it for a few hours. If you like, you can put bonito flakes as well. I personally like to put both. Light a pan and take them right out before the water gets boiled. Put some soy source (a couple of table spoons), Mirin, Sugar and Sake and keep boiling until Sake loses its alcohol.




Let’s cook it:
In this photo, I put some diced chicken, Chinese cabbage, Shiitake Mushroom, Tofu and some noodles. Put those in Nabe, and pour the Soup you made, cover it and light your gas range with mid-high flame. Take cover off once it Boils, take lye and keep it for another 10-15 minutes with small-mid flame. And it is ready! Try it with Soy Source with Citrus Juice “Ponzu : ポン酢“ with grated “Daikon” radish. And When you finish you can put rice or Udon noodles. Those are good, too! If you like Shabu-Shabu,
Just put vegetables into boiled soup (no cover needed) and simply “Shabu-Shabu” your favorite meats.



We also cook Rice with Nabe. It surely tast better than electric Rice Cooker!
